Cheesecake Dreams

A delicious cooky that tastes like little cheese cakes.
Ingredients:
1/3 cup light brown sugar
1 cup unsifted flour
1/2 cup chopped walnuts
1/3 cup butter or margarine - melted
1 pkg (8 oz) cream cheese - softened
1/4 cup sugar
1 egg
2 T. milk
1 T. lemon juice
1 tsp vanilla
Assembly:
Heat oven to 350 degrees. Grease 8" square pan.
In small bowl mix first 3 ingredients. Stir in melted butter
until well combined. Reserve 1/3 cup of the crumbs.
Pat remaining crumbs gently into pan.
Bake 12 to 15 minutes until lightly browned.
Beat cream cheese and sugar until smooth. Beat in remaining
ingredients. Pour over crust. Sprinkle remaining crumbs on top.
Bake 25 minutes until set.
Cool on wire rack. when cool, cut into 2 inch squares.
Cut each square diagonally in half.
Peanut Butter Fingers

If you like peanut butter and chocolate, you'll love these
Ingredients:
1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1/3 cup peanut butter
1/2 tsp baking soda
1/4 tsp salt
1 cup oatmeal
1 cup flour
16 oz pkg of chocalate chips
1 tsp vanilla
Assembly:
Cream butter and sugar. Blend in egg, peanut butter, soda, salt
and vanilla.
Stir in flour and oatmeal. Spread into a 9 x 13 inch lightly greased pan.
Bake at 350 degrees for 20-25 minutes. Remove from oven and sprinkle chocolate chips
evenly over top. Let stand for 5 minutes. Spread chocolate over top.
Drizzle with peanut butter mixture below, if desired, and cut into bars.
Peanut butter topping
1/2 cup powdered sugar
1/4 cup peanut butter
2-4 Tblsp cream
Combine all ingredients.
Sugar Cookie Recipe

This is Mamie Eisenhower's recipe that I picked up when
we visited President Eisenhower's Library in Kansas.

1/2 cup butter
1 cup sugar
2 egg yolks
1 T. cream
1 tsp vanilla
1/2 tsp salt
1 tsp baking powder
1-1/2 cups flour
Directions:
Mix and sift flour, baking powder and salt. Cream butter, add sugar
slowly and cream until fluffy. Stir in well-beaten egg yolks and vanilla.
Add sifted dry ingredients alternately with cream. Chill dough for one hour,
roll out and cut in any desired shape. Sprinkle with sugar before baking or
decorate with icing after baked and cooled.
Bake at 350 degrees, 10 to 12 minutes. Cool on wire rack.
Nutty Chocolate Caramel Bars

Umm Umm, good, and don't skimp on the nuts.
| 2-1/3 cups flour, divided |
1 cup (2 sticks) butter or margarine, melted |
2 cups rolled oats |
2 cups (12 oz pkg) chocolate chips |
1 cup packed brown sugar |
1-1/2 cups chopped walnuts |
1 tsp baking soda |
1 cup (12.25-oz jar) caramel ice cream topping |
1/4 tsp salt |
Directions:
Combine 2 cups of the flour, oats, brown sugar, baking soda and salt in large bowl.
Add melted butter, stir until all ingredients are moistened. Reserve 1 cup of crumb mixture,
press remaining mixture into bottom of ungreased 9 x 13-inch baking pan.
Bake in preheated 350 degree oven for 15 minutes or until lightly browned. Remove from oven.
Sprinkle with chocolate chips and walnuts. Combine caramel topping and remaining 1/3 cup flour
in small bowl, drizzle over chocolate and walnuts. Sprinkle with reserved crumb mixture. Return
to oven and bake an additional 20 minutes or until lightly browned.
Cool completely before cutting into bars.
Walnut Marshmallow Fudge

This is so simple to make. Just one thing, though, you do have to stir
quite often to keep the mixture from scorching. But even if it does
happen to scorch a bit it won't affect the taste, which is doggone good.
Just beat it it pretty good.
Ingredients:
4 cups sugar
1-2/3 cup evaporated milk
3/4 cup butter or margarine
1-12 oz chocolate chips
24 large marshmallows
1-1/2 tsp vanilla
1 cup chopped walnuts
Directions:
In heavy 3 qt saucepan combine sugar, milk and butter. Cook over medium heat,
stirring frequently, to 234 degrees or until mixture forms soft ball when dropped in
cold water. Remove from heat. Add chocolate chips, marshmallows and vanilla.
Then beat with spoon until all chocolate and marshmallows have been completely melted.
Stir in chopped nuts. Pour into buttered 9 x 13 pan. Let cool and cut unto squares.
Stained Glass Cookies

These are named cookies but they are really a candy and a very good one
that is so easy to make, you may find yourself doing it all year,
Ingredients:
1- 12 oz pkg of chocolate chips
4 T. (1/2 stick) butter or margarine
1 egg - beaten
3 cups miniature marshmallows (regular or flavored colored ones).
1 cup chopped walnuts
Shredded coconut
Directions:
Melt chips and butter over low heat. Remove from heat. Add egg slowly while stirring
Mix well. Cool slightly. Mix marshmallows and walnuts in large bowl. Pour chocolate mixture
0ver top. Mix well.
Butter two sheets of wax paper. Sprinkle evenly and lightly with shredded coconut.
Now comes the fun part.
Pour one half of mixture on each paper and with buttered hands shape into logs.
Roll up in wax paper and chill several hours. Slice rolls to serve.
Chow Mein Candy

Ingredients:
2-6 oz pkg butterscotch chips
1-6 oz pkg semi-sweet chocolate chips
1 small can chow mein noodles
3/4 cup cashews or peanuts
Directions:
Melt the butterscotch and chocolate chips together.
Add noodles and nuts. Drop by teaspoonful onto waxed paper.
Chill.
Chow Mein Candy II

Ingredients:
1 c. chocolate chips (6 oz.)
Peanut butter chips (6 oz.)
Salted peanuts (6 oz.)
Chow mein noodles (dry) - 1/2 c.
Directions:
Melt chocolate chips and peanut butter chips together over
low heat. Mix everything together. Spoon out onto wax paper,
form into small balls. Cool until hard. Makes about 30 candies.
